3 c flour
2 tsp ginger, ground
1 tsp cinnamon, ground
1 tsp baking soda
1/4 tsp nutmeg,ground
1/4 tsp salt
1 1/2 sticks butter, softened
3/4 c brown sugar, firmly packed
1/2 c molasses
1 egg
1 tsp vanilla extract

Directions:
Directions:
Mix flour, ginger, cinnamon, nutmeg, baking soda and salt in a large bowl. Set aside. Beat sugar and butter in a large bowl on medium speed of an electric mixer until light and fluffy. Add molasses, egg and vanilla; mix well. Gradually add flour mixture on low speed until well mixed. Press dough into a thick disk. Wrap in plastic wrap. Refrigerate for 4 hours or overnight.

Preheat oven to 350 degrees F.

Roll out dough to 1/4 inch thickness on a lightly floured work surface.Cut into gingerbread men shapes. Place 1 inch apart on an ungreased baking sheet.

Bake 8-10 minutes or until edge of cookies are set. Remove from oven. Cool 1-2 minutes on baking sheet. Remove to a wire rack and cool completely. Decorate cooled cookies as desired. Store in an airtight container.
