2-1/2 C. halved thinly sliced red onion
1/4 C. fresh lime juice
20 C. seeded, cubed watermelon (Yes, 20!)
2-1/2 C. crumbled feta cheese
1-2/3 C. pitted black olive halves
3-1/3 C. chopped fresh mint
1/2 C. olive oil

Directions:
Directions:
Place onion slices in small bowl with lime juice. Let stand for 10 minutes. In large bowl combine the watermelon, feta cheese, olives, onions with lime juice and mint. Toss to blend.
Drizzle with olive oil and serve.

We went to a Gourmet Dinner on my birthday. Paul agreed to fix whatever recipe we were sent as my birthday present, but I did help him pick seeds out of the watermelon! This sounds goofy, but it was delicious. Everyone cleaned their bowls!
