Ingredients: 6 peeled and sliced fresh carrots 1/4 cup reserved carrot water 1/4 cup mayonnaise 1/4 cup sour cream 1/4 cup horseradish 2 Tbsp. chopped onions Salt & fresh ground black pepper 1/4 cup bread crumbs (optional) 1 Tbsp. melted butter (optional)

Directions: |
Directions:Boil carrots and reserve 1/4 cup of the carrot water. Place cooked carrots in a shallow casserole dish. Combine the carrot water with the mayonnaise, sour cream, horseradish, onions and salt & pepper. Pour over top of the carrots in the casserole dish.
If adding the bread crumb topping: Combine the bread crumbs & melted butter. Stir until well mixed. Put on top of the carrots.
Bake at 375º F. for 30 minutes or until bread crumbs are browned and horseradish sauce is bubbly. |

Notes: This is probably my most requested recipe. It originally came from one of the "Best of Bridge" cookbooks. I make it with my turkey dinner for Thanksgiving and Christmas.
I don't usually put the bread crumb topping on it.
I have made it a day or 2 in advance...prepare up to covering the carrots with the horseradish sauce. Cover with plastic wrap and refrigerate. On the day you are serving, bring it back to room temperature (take out of refrigerator a couple of hours ahead) and put in oven @ 375 F. for 30 minutes or until sauce is bubbly.
