1 c shortening
3/4 c sugar
1/2 tsp salt
2 c flour
2 tsp baking powder
1 tsp vanilla
1 c mashed, cooked carrots (about 4 medium)
chocolate frosting

Directions:
Directions:
Cream together shortening, sugar and salt. Add baking powder, vanilla and mashed carrots. Mix in flour. Drop on greased cookie sheet and bake for 12 to 14 minutes at 325. Allow to cool and top with favorite chocolate frosting.

My mom used to make these cookies. It wasn't easy to get us to eat our vegetables but we loved these cookies. I've used baby food carrots and canned pumpkin in place of the cooked carrots.
