3 1/2 C. diced tomatoes
3/4 C. red onion
1/2 C. fresh roasted green chile peppers ( or 2 cans )
1 1/2 C. roasted tomatillos (about 6-8 med. sized)
1/2 bunch of Cilantro
1 tsp dried Chipotle Chile pepper
1/2 jalapeno & Serrano peppers (less if you want mild , or , more if you want extra spicy.)
great also roasted.
2 lg. cloves garlic
juice of 1/2 - 1 whole lemon
salt to taste

To Roast veggies: wash and dry veggies, trim off stems, toss with olive oil and roast on the top rack of the oven, at 450* until lightly browned. Turn and repeat on the other side. Cool completely, then chop or dice ingredients. Mix together and enjoy with your favorite tortilla chips or use as a topping for your favorite Mexican food.

For quick salsa use canned, diced & roasted tomatoes. Put all ingredients in a blender and mix on low/medium speed until desired consistency.
