Ingredients: 1 egg
1 cup granulated sugar
3 ripe bananas, mashed
1/2 cup Hellman's Real Mayonnaise
1 tsp. vanilla
3/4 cup all-purpose flour
3/4 cup whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1 cup walnuts, chopped

Directions:Preheat oven to 350ºF.
Grease 9"x5" loaf pan
Whisk egg in a large bowl. Whisk in sugar, bananas, Hellman's Real Mayo and vanilla until blended.
Stir flours with baking powder and salt in a medium bowl. Add 3/4 cup of walnuts. Fold into the banana mixture until blended.
Scrape into prepared pan and smooth the top. Sprinkle the remaining 1/4 cup of walnuts on top.
Bake in middle rack about 1 hour or until toothpick inserted in centre comes out clean. Cool on wire rack 15 minutes, then remove from pan and cool completely. |

Notes: This recipe works best when using Hellman's Real Mayonnaise -- not Diet or Reduced Fat products.
This is a standard when I entertain at the cottage or away. I like to serve Banana Bread, fresh fruit, coffee & juice for breakfast.
