1 c. butter or margarine, softened 1 c. sugar
1 c. brown sugar, firmly packed 1 egg
1 tsp. vanilla 2 1/4 c. flour
1 tsp. baking soda 1/4 tsp. salt
2/3 c. instant mashed potatoes 1 c. flaked coconut

Directions:
Directions:
In a large bowl, cream butter and sugars until smooth. Stir in vanilla, salt, soda and egg. Gradually add flour. Stir iin potato flakes and coconut. Shape into 1 inch balls; place on ungreased sheets. Flatten with the bottom of a glass dipped in granulated sugar. Bake at 350º for 6 to 8 minutes or until light brown. Cool on wire rack. Store in tightly covered container. Can be frozen.
