1 medium onion, chopped 1/8 tsp salt
1 large green bell pepper, chopped 1/8 tsp pepper
1 clove garlic, minced 1 (10 oz.) can Rotel tomatoes
1/4 cup butter 1 lb. shrimp, peeled & de-veined
1 (4oz) jar diced pimentos 2 cups cooked rice

Directions:
Directions:
Saute onion, bell pepper and garlic in butter or oleo until tender. Stir in pimentos, salt, pepper and tomatoes. Simmer uncovered for 10 minutes, stirring occasionally. Add shrimp, mix well. Cook for 5 minutes or until shrimp turn pink, stirring occasionally. Serve over hot, cooked rice.
