3 eggs
1 c sugar
2/3 c pumpkin
1 tsp lemon juice
3/4 c flour
2 tsp cinnamon
1 tsp baking powder
1/2 tsp nutmeg
1/2 tsp salt
FILLING
1 c powdered sugar
8 oz cream cheese
4 Tbsp margarine
1/2 tsp vanilla

Directions:
Directions:
Beat eggs for 5 minutes; gradually beat in granulated sugar. Stir in pumpkin and lemon juice. Stir together flour, baking powder, cinnamon, nutmeg and salt. Fold into pumpkin. Spread in greased and floured 15 x 10 x 1 pan. Top with 1 cup finely chopped walnuts. Bake at 375º for 15 minutes. Turn out on cloth towel sprinkled with powdered sugar. Roll cake and towel together starting at narrow end and place seam side down; cool. .
Filling
Combine cream cheese, margarine, vanilla and powdered sugar. Beat until smooth. Unroll cake carefully and spread on filling. Roll together and dust with powdered sugar. Chill.
