2-3 lbs of chicken breasts
2 tbsps melted butter, olive oil or coconut oil (your choice)
3 oz Parmesan cheese grated
1/ 2 cup crushed, chopped, or ground smoked almonds
(I like Blue Diamond Smokehouse)
3 tsps ground oregano leaves
2 tbsps Parsley (dried or fresh) - fresh is better
1/2 tsp paprika
1/2 tsp black pepper (fresh cracked is better)
1/2-1 tsp salt

Directions:
Directions:
Heat the oven to 400 ºF (200 ºC)
Spray a backing pan with non-stick spray or use non stick foil
Combine all ingredients together in a shallow bowl except for butter or oil
(you can modify the amounts of dry ingredients to fully coat the chicken)
Dry chicken with paper towel then dip the dried chicken into the butter or oil
Coat chicken with the combined ingredients
Place chicken in prepared pan and bake for 23-27 minutes or until tender.
(Reduce heat if coating begins to burn too much)

Note: chicken can be whole breast or cut into strips.

This is a great dish and gourmet quality. Fancy but very easy. Pick some great fresh vegetables or baked potato with Parmesan cheese coat and salad.
