2 Tbsp. butter
5 medium onions, sliced and separated into rings
2 cups (8 oz.) shredded cheddar cheese
1/3 cup packaged biscuit mix
1/8 tsp pepper
1/2 cup shredded cheddar cheese (for topping)

Directions:
Directions:
In large saucepan, melt butter, add onion and cook, covered, for about 15 minutes, until tender. Remove from heat.

Stir 2 cups cheese, biscuit mix and pepper into onions and pour into casserole dish.

Sprinkle the 1/2 cups of cheese on the top, and bake, uncovered, at 350 for 30 minutes.
