1 8-oz. can crushed pineapple (save juice)
2 3-oz. pkg (or one 6-oz pkg) raspberry gelatin
1 cup boiling water
1 cup cold water
1 cup whole berry cranberry sauce
1 cup chopped walnuts or pecans
1/4 cup finely chopped celery
1 med. apple, finely chopped (2/3 cup)
1/4 cup seedless red grapes, quartered

Cream Cheese Sauce:
1 3-oz. pkg cream cheese, softened
2 tbsp powdered sugar
1/2 tsp vanilla
milk (use to dilute to the right consistency)

Drain pineapple, reserving the juice. Add enough of the additional pineapple juice to make 1 cup. Set aside.

In large bowl, dissolve gelatin in the boiling water. Stir in the cup of pineapple juice, cold water and the cranberry sauce. Chill until the mixture is partially set, stirring occasionally.

Fold in pineapple, walnuts or pecans, celery, apples and grapes. Pour into 2- or 3-qt. rectangular baking dish. Cover and chill about 4 hours or until firm.

This is just delicious! Kathy made it and it was a big hit with Jackie and Little Victor, so they asked me to include it in the book. I'm sure Kathy liked it because she loves to chop up things to precision, so I'm sure she spent time enjoying that aspect! Try it -- it's a HIT!
