12 sheets of Chocolate Graham Crackers, ground up
6 Tbs Butter, melted
4 8-ounce pkg Cream Cheese
5 Eggs
1 8-oz container of Sour Cream
1/4 cup Flour
1 tsp Vanilla extract
Green and Red Food Coloring
Cherry or Strawberry Pie Filling
Canned Crushed Pineapple (dyed gren)
White Decorating Frosting

Directions:
Directions:
Preheat oven to 325º. Coat a 9-inch springform pan with cooking spray and wrap in foil.Mix cracker crumbs and butter, press evenly into pan bottom. Bake crust for 6 minutes.
Fill a roasting pan halfway with water, place in oven.
Beat cream cheese and sugar until smooth, then beat in eggs, sour cream flour and vanilla.
Divide batter equally into 3 bowls. Color one red, one green (leave one white).
Pour the 3 colored batters into the pan. Using a knife, gently swirl the colors together. (Do NOT mix them or the mixture will turn brown!)
Place the pan in the water. Bake for 1 hour and 25 minutes. The center should jiggle slightly.
Turn the oven off but allow cake to remain in the oven for 1 hour and 40 minutes. Remove from oven, run knife around edge of pan. Chill overnight.
Using the decorating frosting, divide the surface of the cake into 8 equal pieces. Decorate with the pie filling and the pineapple, alternating sections.
Carefully remove the band from around the springform pan right before serving.

This is truly a prize winning cake. Stefania entered it in a contest several years ago and won first prize! The cake is very rich, so serves many. The red and green colors make it a perfect Christmas dessert. Our family has frequently enjoyed it on Zimmerman Christmas.
