1/2 cup vanilla yogurt
1/2 cup sour cream
1 cup sugar
Pinch salt
1 egg
1/2 Tsp baking soda
1 1\2 cups flour
1 tsp vanilla
1 pint whipping cream, whipped and sweetened with 1 Tbsp icing sugar
1-2 pounds slightly sweetened strawberries or fruit of your choice

Preheat oven to 350º. Grease and flour three 9" layer pans. In a medium bowl, mix with a wooden spoon or whisk the yogurt, sugar, sour cream, egg, salt baking soda and baking powder. Add flour and vanilla. Divide batter evenly between the 3 pans. Batter will be skimpy, but spread as evenly as you can, layers will rise on baking. Bake for only 10-12 minutes, til very lightly brown. Cool on racks and remove from pans with a plastic spatula onto racks to finish cooling as soon as you can handle the cakes. IMPORTANT: Do not overbake. If not using immediately, put waxed paper between layers, cover with plastic wrap and refrigerate or freeze til ready to assemble cake. Assembly: alternate cake, whipped cream, fruit, cake, whipped cream, fruit, cake and finish with whipped cream. Decorate with additional fruit.
