2 lbs. stew beef
3 lbs. potatoes (peeled and cubed)
3 carrots, thickly sliced
2 celery stalks, cut in pieces
1 medium onion, chopped
4 garlic cloves, diced
3 ripe tomatoes peeled or
1 26 oz. can diced tomatoes in puree
oil for sauteing
water
1 tbsp. salt
1 tsp. black pepper
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. parsley flakes

Directions:
Directions:
Make certain meat is in bite size pieces, saute onion and garlic in small amount of oil. When they are lightly browned and the onions translucent add meat and brown well on all sides. When well browned, cover with water and simmer for about 30 minutes while you are preparing the vegetables.
When vegetables are all prepared add to meat in pot. Add spices and enough water to barely cover all ingredients. You may add more water if it evaporates too fast. Bring to a boil and then lower heat and simmer till everything is nice and tender.
