1 lb.dried red kidney beans
1 tbsp. salt
1 carrot
1 celery stalk
1/2 tsp. red pepper
1 garlic clove
1 small onion
water
6 oz. can tomatoe paste

Directions:
Directions:
Soak beans overnight. Throw soaking water away and rinse beans. Put in 8 quart pan and cover beans with fresh water with at least 2 inches of water over the top. Add finely diced carrot, celery,
onion, and garlic. Add salt and tomatoe paste now also. Bring to a boil, and lower heat and simmer for 2 hours. Watch if the water evaporates, you could add a little at a time if needed. Bean are cooked when tender to your preference. Add red pepper before serving.
