4 Tbs. Olive Oil
2 Potatoes cut into small cubes
Salt & Pepper
2 Tbs. Red Wine Vinegar
1 Tbs. Dijon Mustard
2 Tbs. Oil (I like Olive Oil)
Shallot, Minced
2 Lbs. Spinach, rinse well
2 ozs. Parmesan
4 Eggs

Directions:

Heat Oil and add Potatoes, season with Salt & Pepper.
Cook about 12 -14 minutes till tender and browned.
In large bowl combine 2 Tbs. Oil, Vinegar, Dijon Mustard and Shallot, whisk to combine,
Add Spinach and Shave Parmesan over top. Don't toss yet.
When the Potatoes are done add them to Spinach and Toss.
Divide on 4 plates.
Cook eggs the way you like them and place on top.
Add more Parmesan if you like.
