2 C buttermilk
2 eggs
1/4 C + 2T melted butter
3/4 C all-purpose flour
3/4 C buckwheat flour
2 t sugar
1 t salt
2 t baking soda
1/4 C + 2 T butter

Directions:
Directions:
1. In a medium bowl, whisk together the buttermilk, eggs, and melted butter.
2. In another bowl, mix together white flour, buckwheat flour, sugar, salt and baking soda. Pour the dry ingredients into the egg-mixture. Stir until the two mixtures are just incorporated, but don't over mix.
3. Heat a griddle or large frying pan to medium-hot, and place 1 T of butter, margarine or oil into it. Let the butter melt before spooning the batter into the frying pan, form 4" pancakes out of the batter. Once bubbles form on the top of the pancakes, flip them over and cook on the other side about 3 min. Continue until the batter is used up.

This is not something you eat everyday, but these are so delicious and different from regular pancakes. Many reviews of this said to let it sit for an hour or more to get the lightest pancakes. I have even make the batter the night before and they still came out. I have used fat-free buttermilk and it was just fine.
