Hamburger Steaks with Roquefort and Pancho Sauce Recipe

HAMBURGER STEAKS
1 medium onion, chopped
3 tablespoons salad oil
2 cloves garlic, minced
2 pounds ground beef chuck
2 eggs
1 tablespoon chopped parsley
1 teaspoon salt
1/4 teaspoon pepper

FILLING
1/4 cup crumbled Roquefort cheese
2 tablespoons soft butter
2 tablespoons brandy

Blend ingredients until creamy.

HAMBURGER STEAKS
Saute onion in oil until transparent. Add garlic and cook for about 1 minute until the garlic becomes transparent.

Add onions and garlic to the beef. Also add the eggs, parsley, salt, and pepper. Mix well.
Shape into 4 giant, oval, hamburger balls.

Make a deep hole on one side of each balll. Fill with filling and mold the meat over the opening. Repeat on the other side.

Brush with oil. Sprinkle with salt and pepper.

Broil close to heat until sealed on both sides. Finish broiling about 5" from the heat, turning once.

Serve with Pancho sauce (see separate recipe).
