"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Mom's Potato Soup, by Mom, is from The Shires/Neal Family Cookbook ,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
3 or 4 medium potatoes 1 onion 1/2 celery stalk salt and pepper to taste milk
Peel and dice 3 or 4 potatoes Peel and dice 1 onion and celery. Cover with just enough water to cook. Add salt.
When cooked, mash with potato masher -- retain the liquid.
Add 1/2 stick of butter and milk to proper consistency for soup. Best to use whole milk or even half and half. Heat until warm. Don't boil.
This is the only thing to serve on a cold rainy Saturday, or when you're not feeling so well, or trying to get over a cold. Works better than Chicken Soup! Goes great with a grilled cheese or peanut butter sandwich.
