Old-Fashioned Rice Pudding Recipe

4 eggs
3 c. milk ( I use whole)
1/3 c. sugar
1/4 tsp salt
2 tsp vanilla
2 c. cooked rice
1/2 c. seedless raisins. (optional)
1 tsp nutmeg

Directions:
Directions:
Combine all ingredients and pour into a butter-greased 2 qt baking dish and sprinkle a 1 tsp nutmeg over top
Set dish in larger pan of hot water.
Bake at 300º for about 1 hour
After first 30 mins, insert spoon at edge of pudding and stir from the bottom to ensure distribution of rice.
Continue baking until knife inserted near centre of pudding comes out clean.

Serve hot, warm or cold. Best hot I think.
Serve with a dollop of whipped cream.

This is one of my favorite desserts and since Carl loves anything with rice we have it fairly often.
Mom used to make this frequently when we were children.
