Fromage Blanc
2 quarts of whole milk
1 C heavy cream
2 C butter milk
1 lemon (2 T)

You will need a colander and cheese cloth

Directions:
Combine the Fromage Blanc cream mixture, salt, pepper, and nutmeg.
In large saucepan combine the milk and cream. Combine butter milk and lemon juice, stir well. Add butter milk mixture to the milk/cream mixture.
Begin to heat liquid slowly to 175 degrees F. While heating use a wooden spoon to stir (only) two times...basically two strokes. Once it reaches 175 degrees take off burner immediately. Let it sit for 10 minutes, do not touch. Line a colander with cheese cloth 2 or more layers recommended.
Gently pour the liquid in to the colander, close-up the cheese cloth and move the fromage blanc to another bowl to allow it to drain and reach the texture/consistency you desire. Add sugar (or salt and savory spices depending on what you are making) stir well with a spoon and add 1/2 C heavy cream to increase the richness and to make it more creamy.

This recipe is fun and can be used as a dessert by adding sugar and fresh fruit as we did or you can use it as a base for crostini or pizza or tarte flambee. Enjoy!
