4 bacon slices, diced
1 T. olive oil
1/2 onion, diced
3 medium sweet potatoes, cubed
1 large Granny Smith apples, peeled and chopped
1/2 c. chicken broth
1/4 tsp. dried thyme or 1/2 - 3/4 fresh thyme, minced
1/4 tsp. allspice
1/2 c. toasted pecans (can sub walnuts)
1 T. fresh parsley, chopped

Directions:
Directions:
Saute bacon in oil until browned. Add onion. Saute 2 minutes, add potatoes, and saute an additional 5 minutes. Stir in apple, broth, and seasonings. Cook stirring often until potatoes are tender. Transfer to serving dish and sprinkle with pecans and parsley.
