2 c. butter or margarine
3 c. brown sugar
2 eggs
3 c. flour
2 tsp. baking powder
1 tsp. Baking soda
1/2 tsp. Salt
3c. Rolled oats
11/2c. Coconut
2 tsp. vanilla

Directions:
Directions:
In mixing bowl cream together butter and sugar. Beat in eggs. Sift together flour, baking powder, baking soda and salt. Mix into creamed mixture. Add rolled oats, coconut and vanilla. Combine thoroughly. Shape dough into balls; place on lightly greased cookie sheets. Press balls down with a fork dipped in sugar. Bake at 350ºF for 10 to 12 minutes or until lightly browned. Yield approximately 10 dozen cookies.

Variation: Oatmeal can be ground
Optional: Chocolate chips, raisins, nuts, etc
