1/2 cup butter, softened
1/2 cup plain flour
1/2 cup milk
1 cup sugar
1 cup coconut
400 ml can coconut milk

Blend or process all ingredients until smooth

Pour into greased large pie plate.

Bake at 325 F for 1 hour.

Cool to room temp. Dust with icing sugar.

This recipe does not work well in a convection oven. Chelsea and I tried making this in Paris one time, and the results were not pretty. The tiny kitchen only had a convection oven and a hotplate. We'd cooked other things (like brownies) in the convection oven, and figured this might work as well. The hour in the convection oven burnt the living jesus out of the cake. When it came out, it looked like an asteriod and felt like a rock. The weird strawberry icing we made in an attempt to salvage the burnt pie didn't help, largely because it looked like vomit. Since then, this recipe has been known as 'Vomit Brick Pie'.
