1tsp yeast
2 tsp sugar
25 ml warm water
225g rice flour
300 ml thick coconut milk

Directions:
Directions:
Dissolve the yeast & sugar in the water and set aside for 5 mins
Sieve flour and salt into a bowl and add coconut milk, yeast & sugar mix to form a smooth batter.
Cover & leave overnight.
Heat a hopper pan over a moderate heat & pour 75 ml of batter into the pan.
Tilt & swirl batter and cover with a lid until it is done.
