1 lb large shrimp
2 tablespoons cornstarch
1 teaspoon kosher salt or any salt
3/4 teaspoon ground black pepper
3 tablespoons vegetable oil for stir-frying
1 garlic clove, minced
1 red chilli pepper deseeded and chopped (optional)
1/4 cup chopped green onions

Soak the shrimp in warm, light salted water for 5 minutes. Rinse in cold water and pat dry with paper towels. Lightly coat the shrimp with the cornstarch. In a small bowl, mix the salt with the pepper and set aside. heat 2 tablespoon of oil in wok or pan on high heat. When oil is hot add the shrimp and stir-fry until they turn pink. Remove.
Heat 1 tablespoon of oil, add the minced garlic, salt and pepper and stir in the green onion. Serve on top of cooked shrimp. Serve with white rice. I also add a green vegetable.

We were in Maui, Hawaii and went to a small Chinese restaurant and the waiter suggested this dish. It is very tasty and easy to prepare.
