4 oz. Margarine
2 oz. onions
8 oz. celery
1 bay leaf
1 garlic clove
4 oz. flour
20 c. hot stock

Directions:
Directions:
Saute margarine, onions, celery, bay leaf and garlic do not brown
Add flour to make a rue, cool
Add hot stock until smooth
Bring to a boil and season, simmer 30-40min
Strain
