1 tbsp. olive oil
1/2 yellow onion, coarsely chopped
2 cloves garlic, minced
3-4 whole chicken legs
1 cup chicken broth or stock
3 large carrots, chopped
4 red potatoes cut into wedges
fresh or dried parsley add to your desire

1. Warm a large skillet over medium high heat and add olive oil, onions, and, garlic. Stir. Do not brown just cook for 3-4 minutes until softened. With a spoon, remove from pan into a bowl and set aside.
2. In the same skillet add the chicken. Brown the chicken about 5 minutes on each side.
3. Once the chicken is browned add the chicken stock/broth and top the chicken legs with the onions and garlic you set aside, then add carrots, and potatoes around the chicken legs then I like to sprinkle the parsley over top of everything.
4. Put a lid over the skillet and turn the heat down to medium. Allow to cook for 45 minutes.
5. Serve and enjoy!

This is a recipe that my dad (Jessica's dad) always made when we were growing up. The chicken is moist and all the ingredients add a nice flavour. Hope you like it as much as we do!
