Ingredients:  
Half a chicken
One Red Onion chopped in small pieces
Two cloves of garlic chopped
Two whole carrots cut into small pieces
Two celery sticks cut into small pieces
Half of a white sweet potato cut into small pieces
Zest one lemon
Two small bay leaves
One pint of Chicken Stock
2 tbsp. of olive oil
Two tbsp of salt and pepper

Directions:
Directions:
Sauté all veggies in olive oil with Salt and Pepper on medium heat. Once veggies are soft in about 10 minutes add the lemon zest, bay leaves, chicken broth and whole half chicken. Cook on low for about 2 hours until chicken is falling apart. Take all the chicken out and discard the bones and skin Shred the chicken and add back to the soup. Taste for enough Salt.

Quick version: Shred leftover chicken or rotisserie chicken from the store and simmer together until veggies are completely cooked and soft.

You can add pasta or rice if you prefer just make sure you add more salt.
