½ Kg de farinha de mandioca
200 g de azeitona verde sem caroço
200 g de manteiga
3 cebolas médias
1 tablete de caldo de galinha
4 colheres de azeite

Descasque e pique a cebola em pedacinhos bem pequenos (ou use um processador)
Bata no liquidificador a azeitona sem caroço até formar um creme
Em uma panela aqueça, em fogo brando, o azeite e junte a cebola. Refogue até a cebola começar a dourar e, em seguida adicione o creme de azeitona. Refogue até reduzir um pouco o creme. Retire do fogo e acrescente o tablete de caldo de galinha, misturando bem até que ele fique completamente dissolvido.
Retorne a panela ao fogão e em fogo baixo acrescente a farinha de mandioca. Cozinhe a mistura até obter uma mistura homogênea e solta (15 a 20 min.).
Abaixe ainda mais o fogo e acrescente a manteiga, mexendo vigorosamente para que ela derreta e se misture à farofa.

Sirva em um recipiente separado de louça com seus pratos prediletos.
