3 tbsp. minute tapioca
3 tbsp. sugar
1 egg yolk
2 tbsp sugar
2 cups milk
1/8 tsp salt
1 egg white
3/4 tsp vanilla

Directions:
Directions:
Mix tapioca, salt, 3 tbsp sugar, milk and yolk in pan. Let stand 5 min.

Beat egg white until foamy. Gradually beat in 2 tbsp. sugar. Continue beating to soft peaks. Set aside.

Cook tapioca mixture over medium heat to a full boil, stirring constantly; 6-8 min. Gradually add to beaten egg whites, stirring quickly, just until blended. Stir in vanilla. Pour into desert dishes. Cool 20 min. Serve chilled.
