1 C. Crisco
1 C. Sugar
1/2 C. Molasses
1 Egg
1 tsp. Vanilla
2 tsp. Baking Soda
3 T. warm Water
1 tsp. Salt
4 C. Flour

Filling:
1/2 lb. pitted, chopped Dates
1 C. Sugar
2 T. Butter
2 heaping tsps. Cornstarch
1 tsp. Vanilla
1 C. Water

Cookie Dough: In a large bowl combine the crisco, sugar, molasses, egg and vanilla until smooth. Add the baking soda which had been mixed in warm water. Mix in the flour, and salt, making a nice soft dough. Wrap in foil and set aside while making filling.
Filling:
In a heavy saucepan on top of the stove place all the filling ingredients. Bring to a boil then turn heat down to a simmer until date mixture is thick. Cool.
Roll out cookie dough and cut in circle shapes. Place them on the cookie sheet. Drop one heaping teaspoon of filling on top of each in the center. Place another cookie on top, lightly pressing around the edges. With a sharp knife cut a slit in the center of the top cookie, about a half inch. Bake at 325º for 10 minutes. Watch! Do not overbake.

These cookies make notoriously great Christmas photos if everyone holds one in each hand and covers their eyes with them. Children and Phil Ryan, in particular, are fond of doing this. Oh, and they taste really good, too!
