½ t. salt
4 T. butter or margarine
½ c. chopped green pepper
1-lb. can tomatoes, with juice
1-bay leaf
¼ t. Tabasco sauce
2-lbs. bass fillets
½ c. chopped onion
½ lb. sliced mushrooms
2-T. lemon juice
¼ tsp tarragon leaves(be careful)

Directions:
Directions:
Melt butter in large skillet adding onion and green pepper. Cook until tender; add mushrooms. Cook another three minutes. Put in tomatoes, lemon juice, bay leaf and tarragon, Tabasco and salt. Cover and simmer for 20 minutes. Add fillets, cover and simmer 5 –10 minutes, or until fish flakes easily when tested with a fork. Serve over cooked rice. Serves 4.
