3 eggs
1 cup oil
2 cups sugar
2 teas vanilla
2 cups coarsely shredded zucchini
1 8 1/4 oz can well drained pineapple
3 cups flour unsifted
2 teas soda
1 teas salt
1/2 teas baking powder
1 1/2 teas cinnamon
3/4 teas nutmeg
1 cup finely chopped nuts
1 cup currants

Directions:
Directions:
Beat eggs. Add oil, sugar and vanilla and beat until mixture is thickened and foamy. With a spoon stir in zucchini and pineapple. Combine flour, soda, salt, baking powder, cinnamon, nutmeg, nuts, and currants. Stir gently into zucchini mixture just until blended.
