Salad:
I head romaine lettuce, washed and torn into small pieces
5 stalks celery, thinly sliced
1 bunch scallions, root end removed, sliced thinly, including much of the dark green part.
1 11oz can mandarin oranges, store in refrigerator until assembling.

Dressing:
1/4 cup oil
2 Tablespoons sugar
2 Tablespoons cider vinegar
1 Tablespoons chopped, fresh parsley
1/2 teaspoon salt
pinch hot red pepper or a few dashes tabasco sauce

Almond Nuts:
1/3 cup sliced almonds
1/4 cup sugar

Prepare the salad ingredients and mix well, put them in a large serving bowl.
Put a roughly 12" by 18" inch piece of aluminum foil on a cleared counter space. In a dry fry pan, with no oil or spray, put 1/4 cup sugar over medium heat. Allow the sugar to just begin to melt and add the almonds. Stir regularly with a cooking fork, until the sugar is completely melted and the almonds are beginning to brown. Quickly remove from the heat and "pour" the sugar coated almonds onto the foil. This is a very hot mixture that can really burn you, be careful. Replace the fry pan on the stove top and quickly try to press out the nut "candy" into a flat pile. When it is cool, break it up into small pieces. Mix the dressing ingredients together. Add to the salad ingredients and toss well. Add the chilled mandarin oranges. Toss again. Top with the sugared almonds and serve immediately. If you delay serving the lettuce will wilt and the nuts will lose their lovely crunch.
