2 cups sugar (superfine is best)
4 cups sifted flour (or cake flour) (add 2 - 4 tbsp if using anise extract)
1 tsp baking powder
1/4 tsp salt
2 tbsp melted butter
2 tsp (+ if stronger flavor desired) anise extract

1. Beat eggs in large bowl using a stand mixer, gradually adding sugar. Then beat at medium speed for 10 minutes (if using a hand mixer, beat for 30 minutes.
2. Sift together flour, baking powder and salt; blend into egg mixture alternately with butter, mixing well. Cover and chill dough for about 1 hour.
3. Dust surface lightly with flour, roll out dough to almost 1/2 inch thickness.
4. Cut dough into rounds, or squares and place on a lightly greased cookie sheet about 1/2 inch apart.
5. Bake in a preheated 325º oven for 12 minutes. Cookies should be barely golden on the edges. Remove cookies and cool on a rack.

The following will make an interesting but very hard cookie: If a design on the top is desired, use a springerle board or springerle rolling pin after rolling out dough. Brush off excess flour, place on cookie sheet and let stand overnight. Bake at 350º for five minutes, reduce heat to 300º for 10 minutes until cookies are barely golden on the edges. Remove and cool.
