2 1/2 lbs. red bell peppers
3 T. olive oil
1 large onion, chopped
3 lbs. tomatoes, peeled and diced
2 t. sugar
2 1/2 c. beef broth
2 bay leaves
1/2 t. salt
1/4 t. pepper
2 T. dry Sherry
1 T. Sherry wine vinegar
1/4 t. Tabasco

1. Char bell peppers over gas flame or in broiler until blackened on all sides. Wrap in paper bag and let stand 10 minutes. Peel and seed. Rinse if necessary and pat dry. Puree in food processor until smooth.
2. Heat oil in heavy 4 qt. sauce pan over medium high heat. Add onion and saute until tender, about 8 minutes. Add tomatoes and sugar and cook until tomatoes release their juices, about 10 minutes. Stir in stock, bay leaves, salt and pepper. Bring mixture to a boil. Reduce heat and simmer 30 minutes. Cool slightly.
3. Discard bay leaves. Puree tomato mixture in batches in food processor. Return mixture to sauce pan and add bell pepper puree, Sherry, vinegar and hot pepper sauce. Simmer over low heat for 20 minutes, stirring occaisionally. Serves 6.

This is a great soup to make and freeze. Garnish with fresh chopped chives and serve with crostini or crusty bread. Due to the color, this makes a great starter for Christmas Eve dinner.
