4 chicken cutlets
2 T. olive oil
1/4 c. vodka
1/2 c. low sodium chicken broth
2 T. fresh lemon juice
1/2 c. chopped tomatoes, fresh or canned
2 T. heavy cream
2 T. capers
1/3 c. scallions, minced

Directions:
Directions:
1. Season chicken cutlets with salt and pepper and dust with flour. Saute in oil in a heavy skillet. Remove chicken and keep warm.
2. Deglaze pan with vodka and boil until nearly gone. Add broth, lemon juice. Return cutlets and cook 1 minute on each side. Remove cutlets and keep warm.
3. Add tomatoes, capers and cream and heat through.
4. Pour sauce over cutlets and garnish with scallions. Serves 2.
