2 cups white sugar
1 cup water
1 tsp. cream of tartar
1 1/2 Tbsp. vinegar
1/4 tsp. extract (has to be oil)...(peppermint, cloves, cinnamon, lemon, orange, wintergreen, spearmint, etc.)

Directions:
Directions:
Combine all ingredients in a heavy saucepan (except extract) on low-medium heat. Add food coloring, if desired, at this point. Cook to soft-crack stage (260ºF or 258ºF degrees). Pour onto buttered platter.

As candy cools, lift edges toward the center. When cool enough to handle, and even before, add extract and pull, using fingertips and stretching the candy until it becomes white. Pull into a long rope and cut with scissors while soft, or crack into pieces after it hardens. Wrap in wax paper.
