6 boneless chicken breasts
2 tbsp veg. oil
lemon pepper
6 slices bacon
1 red pepper, chopped
1 green pepper, chopped
1 1/2 c cheddar/monterey jack shredded cheese

Directions:
Directions:
Heat oven to 400. Grease 9 x 13 baking dish. Brush both sides of chicken with oil and sprinkle generously with lemon pepper. Place in baking dish and bake 25-30 minutes, until juicy but no longer pink. While chicken is baking, fry bacon until crispy. Drain and saute peppers in 2 tbsp bacon grease until tender, drain grease and remove from pan. Crumble bacon and add to peppers. When chicken is cooked through, layer peppers, bacon and then cheese on top. return to oven just long enough to melt cheese
