Pork Back Ribs or Spareribs
Your favorite Dry Rub
A marinade, like apple cider, wine, etc.
Barbecue sauce
Wood for smoking, mesquite, apple, etc. soaked in water overnight or at least 5 hours.

Cut ribs into slabs that will fit in the smoker. Cover ribs with the dry rub. Prepare the smoker, adding the wood and setting the temperature to medium. You'll want the temperature to stay around 225º. Using the 3-2-1 method for spareribs and 2-2-1 method for back ribs. Smoked the ribs for 2 hours. Then remove ribs, cover with aluminum foil, adding a bit of marinade to allow the ribs to steam while they sit on the cool side of a grill for about 2 hours. The last hour, remove foil and finish on the grill, brushing with barbecue sauce or not. The ribs will be juicy and tender but not falling off the bones. Enjoy!
