2 sticks Butter (1 cup) (do not use margarine)
1 cup Brown Sugar, packed
2 cups Semi-Sweet Chocolate Chips
1 1/2 sleeves Saltine Crackers (approximately 40 crackers)
1/4 cup Sprinkles (recommend holiday themed sprinkles!)

Preheat the oven to 425º. Prepare a backing sheet by lining it with aluminum foil and spraying the foil with non-stick cooking spray.
Arrange the crackers salt side down in a single layer on the baking sheet.
Place the butter and brown sugar in a saucepan over medium-high heat. Stir while the butter melts, and bring mixture to a rolling boil (approx 3-5 minutes). Remove from heat and carefully pour the sugar-butter mixture over the crackers on the baking sheet.
Bake at 425º for 3-5 minutes, until the toffee is bubbling over all the crackers. Carefully remove pan from oven. Sprinkle the chocolate chips on top of the hot toffee crackers and allow them to sit for about 1 minute to soften and melt. Once softened, use a flat spatula to spread the melted chocolate over the entire surface of the crackers as evenly as possible. Sprinkle decorative/holiday sprinkles over the chocolate. Let mixture cool, (refrigerate or freeze the pan for approx. 30 minutes to expedite process). Once set, break into small, uneven pieces by hand. Store in an airtight container for up to a week.

This is a perfect recipe for a sweet, party treat and/or for gifts. I first made this around Christmas and it was almost entirely eaten the first day! Would be good over ice cream too. You can add other toppings besides sprinkles if you prefer-nuts, coconut, sea salt, etc.
