2 Pork Tenderloins (Usually packaged together) Hoisin Sauce (8.5 oz jar) 3 tbsp ketchup 3 tbsp brown sugar 5 tbsp Soy Sauce 3 garlic cloves (grated) 1/4 tsp Chinese Five Spice powder (optional) few drops red food coloring (optional) 1 slice fresh ginger (grated) 2 scallions cut in 1" pieces 2 tbsp dry sherry (optional) 4 tbsp brown sugar 1 tbsp oil

Mix all ingredients in med size bowl. I cut the tenderloins in half, add them to the mix. I use a micro plainer to grate garlic cloves and fresh ginger. Place everything in a quart sized freezer bag, marinate overnight!!! The next day, drain off marinating sauce, saving some for basting. Place on a foil wrapped pan with a rack, bake in a 350º oven 35-40 minutes, basting twice. temp should be 140º on a meat thermometer. Remove from oven and LET SET TILL COOL. DO NOT GET IMPATIENT!!! This will make your pork juicy and tender. When cool slice thinly serve with Chinese Hot mustard, ketchup, sesames seeds
