3/4 c. Firmly Packed Brown Sugar
3/4 c. White Sugar
1/2 c. Paprika
1/4 c. Kosher Salt
1/4 c. Garlic Powder
2 T. Ground Black Pepper
2 T. Ground Ginger Powder
2 T. Onion Powder
2 t. Rosemary Powder (may have to grind your own in mortar and pestle)

Dump all ingredients in a large bowl and combine well. Store in an air tight jar.

About the rosemary, don't leave it out. Trust me, it hides in the background and you will never know it is there. But it is. It is subtle and important in this blend. If you can find ground rosemary, good for you. It's hard to find. So just grind the rosemary leaves in a mortar and pestle or in a coffee grinder. It will take 2 to 3 tablespoons of leaves to make 2 teaspoons of powder. Again, don't leave it out.

This rub is great on pork and beef. I grill the meat low and slow with just the rub, then finish with the Lexington sauce during the last hour to hour and a half.
