2-3 jars of marinated artichoke hearts,
1 box of vegetarian spiral noodles (cooked and cooled),
1/2 lb. cheddar/jack cheese (cubed),
Italian dressing (Bernsteins is preferred),
1 can olives (sliced),
2 c. broccoli spears (blanched),
2 c. cauliflower spears (blanched),
several pepperoni slices

Directions:
Directions:
Mix all ingredients with a small amount of dressing. Chill. Right before serving, add just enough dressing to coat salad. If you mix it too soon the dressing will soak into the salad and it will taste dry. Best if completely wet with dressing but not drenched. If eating left-overs the next day more dressing may be needed.
