Cake:
3 c. Brown Sugar, packed
3/4 c. Canola Oil
3 Eggs
2 2/3 c. Flour
2 1/4 tsp. Baking Powder
2 1/4 tsp. Baking Soda
1 tsp. Salt
1 T. Vanilla
1 1/2 c. Milk
1 1/2 c. Water
1 1/8 c. Cocoa Powder

Butter Cream Frosting:
1 lb. Butter, unsalted
4 c. Powdered Sugar, sifted
2 1/2 T. Vanilla
1 Pinch of Salt

Chocolate Ganache:
1 bag Semisweet Chocolate Chips
1-2 T. Light Corn Syrup
1/4 c. Heavy Cream

Cake: Preheat oven to 350º. Oil and line three 10" cake pans with parchment paper. In a mixing bowl, sift together flour, baking soda, baking powder and salt. In a separate mixing bowl, mix sugar and oil on low with an electric mixer, adding eggs one at a time. In a third bowl, mix vanilla and milk, set aside. Alternately add flour mixture and milk mixture to the egg and sugar mixture. Begin and end with the flour mixture. Mix well. In a saucepan, boil water and add the cocoa powder. Mix well to combine. Stir into cake batter. Bake cakes for 30 minutes (check every 10 minutes or so).

Frosting: With an electric mixer, beat butter until super soft. Add vanilla and powdered sugar slowly and mix until desired consistency is reached, about 5-7 minutes. Frost and refrigerate cake to set up frosting.

Ganache: Put chocolate chips and light corn syrup into a small mixing bowl. Boil heavy cream. Add to chocolate chip mixture and stir until chocolate is melted. Let cool for a few minutes and then pour over the top of the cake.

Tip: Add fruit between the layers to mix things up! Blueberries, raspberries, blackberries and strawberries are yummy!
