Garlic cloves, peeled 20
Onion, diced 1/4 cup
Parsley leaves 1/4 cup
Fresh rosemary 1/8 cup
Bay leaves 2
Cracked black pepper 1 Tbsp.
Lemon, roughly chopped 1/2
Olive oil 1/2 cup
Broiler chicken, 3-lb.
Salt to taste
Freshly ground black pepper to taste

1. In food processor, puree peeled garlic, onion, herbs, pepper and lemon. Stir in oil. Rub chickens with paste, inside and out even putting some between the meat and the skin. Place in plastic bag in a bowl and refrigerate 1 to 2 days. Remove chicken from marinade. Season with salt and pepper.

2. Heat BBQ grill and put cast iron frying pan or roasting pan to the opposite side of burner. Turn burner to high and leave pan for 10 minutes until it get real hot. Add chicken and cook 45 minutes to 1 hour. Let sit for a few minutes before carving. Enjoy.
