Ingredients: 3 - Cups all purpose flour 1-1/4 - teaspoon salt 1 - tablespoon instant yeast 3 - tablespoons butter 2 - tablespoons nonfat dry milk 3 - tablespoons sugar
Filling 3/4 - cup of Baker's Cinnamon Filling Mix* 3 - tablespoons water

Directions: In a large mixing bowl combine all dry ingredients. Get a cup of water and put the butter and microwave for 1 minute, or until the butter melts. Mix and knead until the dough is smooth. I use my mixer with the dough hook for all my breads.put the dough in a bowl and let double, about 1-1/2 hour. Roll dough into a rectangle, approximately 8"x24" Mix together the cinnamon and water to make a paste like consistency. Spread the filling on the dough and leave about a 1" border. Roll the dough, starting with the shortest edge, pinch the ends closed and put it in the pan, seam side on the bottom. Cover pan and let rise until it crowns about an inch above the edge of the pan. Bake the bread in a pre-heated oven at 350º for about 35 minutes. |

Notes: I used Baker's Cinnamon Filling Mix, but you can also make your own filling with sugar, cinnamon, a bit of flour and water. If you want to get the Baker's you can purchase it at King Arthur Flour, online at kingarthurflour.com. It has the best flavor, not so sweet and it really makes the bread stand out from others!
