WET INGREDIENTS:
1-1/2 C. applesauce
1/2 C. oil
1/2 C. honey
1 C. buttermilk
2 eggs, beaten
1 T. lemon juice
DRY INGREDIENTS:
2 C. quick oats
1-1/2 C. whole wheat pastry flour
1 T. baking powder
1 tsp. soda
1 tsp. cinnamon

Directions:
Directions:
Beat eggs, then add remaining WET ingredients.
Sift together dry ingredients and mix lightly with wet ingredients, the lighter the better. Overmixing makes heavy muffins.
Fill cup cake liners 2/3d's full, place in muffin pans and bake in preheated 400 degree oven for 15-18 minutes.

Dough keeps well in refrigerator, so can be doubled and fresh muffins baked each morning. Or bake them all at once, freeze what you don't eat and re-warm in microwave or toaster oven.
